Dinner for Two with Frontera

Can I be honest? I love my job. I love being an entrepreneur. I love blogging, creating, photographing, making, emailing, and writing. I love the freedom my job creates, I love what I do, and I can work my stinking butt off doing it. What I don’t love is reaching the end of a long day and trying to figure out dinner & then make it. That’s no secret if you have been around her for any time at all! haha.

Because Bruce and I still have to eat when we get off work, I have been trying to find meals that fit our lifestyle. There are just two of us so while slow cookers are magical, they are not always practical. Lately I have been spending a lot of time at Target and while on a trip last week, I found Frontera® Skillets in the frozen food aisle. With a quick look at the ingredients and the 15 minute meal prep, I was sold. I added the Frontera® Chicken Taco Skillet & Frontera® Chicken Fajita Skillet to my cart – I really should have picked all 5 to try!!

I got home and made us dinner that night in just 20 minutes. It was simple yet so darn tasty. This my friends is a win in our books! We made the Chicken Taco Skillet for this meal which is has roasted tomatoes and garlic, grilled chicken and a smoky chipotle sauce making it a traditional Mexican favorite! Frontera Foods brings authentic Mexican ingredients, flavors, and recipes to your home and without taking shortcuts!!

CHICKEN TACOS

WHAT YOU NEED

  • Frontera Chicken Taco Skillet
  • Mexican Shredded Cheese
  • Lettuce cut in strips
  • 1 Lime
  • Frontera Salsa
  • Chips
  • Flour Tortillas

HOW TO

  1. Clean & Cut Lettuce & Limes
  2. Prepare
  3. Frontera Chicken Taco Skillet according to directions
  4. Set out tortillas and cheese
  5. Make your own Tacos & ENJOY!

 

At the end of a long day it is nice to gather around the table and share a meal. It is also nice when I don’t have to spend the entire afternoon trying to prepare a meal for us! Are you sold too?     I rarely cook anything that isn’t from scratch, but now that it’s just Marion and I, that’s not always practical and may result in waste (which I hate). Also, during the busy work periods, it’s HARD to cook… Since tacos is basically our favourite meal, thank you for sharing. I’m going to have to look at this and put it in the freezer for those days I just can’t.

    These types of meals are definitely a reality in our lives at times too! I hear you on the non-practicality of a crock pot when there are only two of you. Ours is collecting dust. Tacos are perfect for those nights you don’t have a ton of time to cool anyway. And, let’s be real – there is no such thing as getting tired of this meal!
