I’ve never been good with lunches. I don’t love the classic lunch foods (never have) so I’ve been on a journey all my life to find lunch meals that work for me. Sandwiches are so quick and easy but I am just never into them. Growing up my mom always had to get creative with my packed lunches and usually they were just a bunch of snacks hitting all the important foods I needed – dairy, protein, veggies, filler, and fruit.
Working out of the house helped a bit as I had to think the night before about what I would be bringing to work with me to eat , but now that I work at home I put zero thought into lunch time until well, lunch time! I’ve been craving simple, healthy meals being pregnant and lunch time has been the hardest for me to get something filling & tasty. On more than one occasion I’ve snacked my way through the day – grapefruit, handful of almonds, apple & peanut butter, yogurt, cucumber with ranch, etc. But baby doesn’t always love that as much. I have had to be really careful about getting the foods & water I need because if I don’t I can feel super faint/ actually faint and that’s not good! Got to take care of my body and this little babe!
That’s when I learned about Super Lucky Elephant Coconut Thai Hom Mali Jasmine Rice (they also have Thai Hom Mali Jasmine Rice) It is real jasmine rice, sourced straight from Thailand and microwaveable, ready in 90 seconds! I don’t love to cook so I will not be spending my day making two (or three) meals! Breakfast and lunch have to be quick meals for my sanity and tummy. Thai Hom Mali Jasmine Rice is an authentic, traditional rice grown only in Thailand. It is the most prestigious variety of rice in the world – its purity and quality are certified by the Thai government. Also non-GMO & Gluten Free! I love knowing that not only am I eating something delicious but also good for me & baby!
I love adding steamed veggies to my bowl – whatever I have on hand (which is normally broccoli!!) – and adding soy sauce or a little bit of teriyaki sauce. If you have left over grilled chicken to add to the bowl, that’s also fun to throw in! It is the perfect simple lunch for me and my work schedule.
What are some of your go-to office lunches?
